Winter in MN means soup. It's coldAF, and the last thing I want is a salad after snowshoeing. Gotta be honest, this soup through me for a loop. I found it on the goop website under their detox, and I figured it would taste really green....Like, celery juice green. HELL NO, I was SO wrong, It is so comforting and savory! I did it exactly as they posted, and also added quite a bit of black pepper. The nutritional yeast is always a miracle worker and miso completes the goodness in your belly.
This soup is also super easy to make. I dislike complicated. A LOT. One reason I chose it, is because anything that I can make in one pot with an immersion blender gets me stoked. Plus, clean up is quick and easy.

Pretty sure I will be making this every Sunday along with my squash soup recipe for meal prepping this Winter.
